Ou khattaଓଉ ଖଟା

A little sweet, a little sour. The bowl at the edge of the meal has a story of its own.

Cooked elephant-apple pieces with coconut and seeds in a blue-rimmed bowl.

The small bowl that changes the meal

Give the accompaniment a moment of its own. Notice the fruit, the sauce, the seeds; then ask the cook how this version found its way to the table.

Ou khatta is an elephant-apple relish. In Sasmita’s sweet version, boiled pieces meet jaggery or sugar, ginger, a seed tempering and coconut.

A meal remembered through one dish

Julie Acharya Ray remembers ou khatta among the dishes in her mother’s Kartik meals. Her 2014 account gives this bowl a place in one family’s calendar.

Food memories can be wonderfully specific: a particular kitchen, a particular person, a taste you keep looking for. Which dish brings you home?

03 · A taste of Odisha

Two versions, one cook’s curiosity

Sasmita’s later sweet-and-sour version introduces mustard–cumin paste with jaggery and panch phoron. It leaves out onion and garlic. Read the two preparations side by side to see how one cook varies a familiar dish.

The two recipes come from the same author. They invite comparison, without defining how every household should cook ou khatta.

Bring curiosity to the table

Ask whether the serving is sweet, sour or both, and what goes into its tempering. Mention ingredients you avoid, including mustard, before ordering.

Save it as a dish to seek out, then confirm availability with your host or cook. We have not reviewed a kitchen. If someone shares a family memory, ask before recording or publishing it.
